Tasting Notes
2014 Cabernet Merlot
Deep red with a purple hue. Aromas of black currant and cherry with hints of vanilla and spice are evident. The substantial palate is assertive with great structure and length. Complex concentrated sweet notes of black cherry and blackcurrant are nicely integrated with savoury herb and chocolate flavours. The wine is very well balanced with soft tannin. It has a very long finish with lingering plummy flavour.
Origin of Grapes: Barossa Valley: Cab Sauvignon (55%) Merlot (43%) Petit Verdot (2%)
Maturation: Fermented in static & open fermenters and matured for
20 months in predominantly French Oak hogsheads
Analysis: Alcohol 14.0% : Acid 6.35 g/l : pH 3.73 : RS 2.1
Vintage Comments: Early temperatures in October, November and December were well above average…enhancing rapid development. After a dry Spring January was mild, thank goodness. Mild dry ripening conditions later combined with low yields led to good varietal expression in Cabernet Sauvignon and Merlot.
